CHEESY CHICKEN AND RICE CASSEROLE RECIPE

1 can cream of chicken soup
1 1/3 cups water
3/4 cup uncooked regular long-grain white rice
2 cups fresh or frozen vegetables, whatever you desire
1/2 teaspoon onion powder
4 skinless, boneless chicken breasts
1/2 cup shredded cheddar cheese

Stir in soup, water, rice, vegetables, and onion powder in a 9" x 13" inch shallow stoneware baking pan. Top with chicken, season chicken as desired. Cover. Bake at 375 degrees F for 45 minutes or until done. Top with cheese.

For an Italian flavor, use 1 teaspoon of italian seasoning instead of onion powder, and substitute 1/3 cup shredded parmesan for cheddar. For a Mexican flavor, use 1 teaspoon chili powder instead of onion powder, substitute a mexican cheese blend for cheddar.
