SHRIMP CREOLE

This recipe came to me from my husband?s co-worker, Starling Ennis, on the News Desk at The Birmingham News.

• 1 C. medium onion diced with French Chef Knife
• ? C. diced celery (2 stalks)
• 1 clove garlic, minced
• 3 T. oil

• 1 T. flour
• 1 t. salt
• 1 t. sugar
• 1 T. chili powder

Saut? vegetables in oil, sprinkle with flour mixture and cook a minute or so.

Add and simmer 15 minutes:

• 1 C. water
• 2 C. tomatoes (1 can diced tomatoes)

Add:

• 1 T. vinegar
• 1 small can drained English peas (or a couple handfuls frozen peas)

When ready to serve add:

• 2 C. cooked shrimp

Serve over rice.

Cook?s note: Shrimp get tough when over-cooked or re-heated, so Yum-Yum, Eat?em Up!
