SHRIMP CREOLE

This recipe came to me from my husband?s co-worker, Starling Ennis, on the News Desk at The Birmingham News.
- 1 C. medium onion diced with French Chef Knife
- ? C. diced celery (2 stalks)
- 1 clove garlic, minced
- 3 T. oil
- 1 T. flour
- 1 t. salt
- 1 t. sugar
- 1 T. chili powder
Saut? vegetables in oil, sprinkle with flour mixture and cook a minute or so.
Add and simmer 15 minutes:
- 1 C. water
- 2 C. tomatoes (1 can diced tomatoes)
Add:
- 1 T. vinegar
- 1 small can drained English peas (or a couple handfuls frozen peas)
When ready to serve add:
- 2 C. cooked shrimp
Serve over rice.
Cook?s note: Shrimp get tough when over-cooked or re-heated, so Yum-Yum, Eat?em Up!
